How to start the Y-Axis off with a pre-defined number that is not part of the bars in the graph? Right now the bar graph starts with the lowest number in the chart. Example: if the lowest number is 25 then it would start at 25 but I may want it to start at zero.

Hello!

The chart Y-axis starts with the lowest number in data, so i'm afraid, you have to invent other method. Maybe try to add additional data, but no label to it? I mean try to put 6 data values in "data" array in js, but just 5 labels in "labels" array.
